Battle of the bubbles

This Christmas we've consulted Avenue's expert Head Sommelier Agustin Trapero on the best bubbles to share with our nearest and dearest. He's picked out a classic champagne, as well as a sparkling New World fizz which comes with some serious pedigree... Champagne Ulysse Collin Extra Brut Les Perrières Blanc de Blancs NV, Champagne, France

The details: Made in a small Récoltant-Manipulant (RM) property in Congy in Cote des Blancs, this wine is 100% Chardonnay grown in a single vineyard; Les Perrieres,which has a deep black silex soil, giving mineral and earthy notes. Fermentation takes place in oak barrique and the wine is aged in its own yeast for 24 months.
The result: A medium-bodied Champagne with apricot and peach aromas follow by toasty and biscuits flavors and long finish.
Best with: Good with traditional Christmas turkey or suckling pig.

Quartet Brut NV, Anderson Valley, USA 

The details: Quartet is legendary champagne house Louis Roderer’s project in Philo, Mendocino in California - it's an organic and biodynamic property of 235 hectares. Pinot Noir and Chardonnay are the main grapes in Quartet, much like champagne, and it's produced with the same method too.
The result: A clean and crisp wine with touches of lime and lemon character, refreshing finish.
Best with: It makes a great aperitif, but it's also wonderful with fresh oysters or hard cheeses.
